Zucchini Slice

The slice that tastes so good that you wouldn’t know its packed full of vegetables.

Perfect for kids and bigger kids (with the addition of feta, of course). This recipe was sourced from Chantelle at Fat Mum Slim. She has some ripper recipes on her site and some awfully gorgeous photos. You can find her here.

This is my favourite zucchini slice recipe that I have found so far and is easily adaptable.

Ingredients

  • 350g zucchini, grated
  • 3/4 cup Self-Raising Flour
  • 2 cups mixed vegetables diced (I used grated carrot, red capsicums, mushrooms and some baby spinach)
  • 1 1/2 cups low fat cheese (you could do a blend of tasty and parmesan if you liked)
  • 1/2 cup peas
  • 1/2 cup corn
  • 2 eggs
  • 3 egg whites
  • 1 onion, diced
  • 1 cup bacon (or lean ham), diced

 

Method

  1. Preheat your oven to 180 degrees celsius.
  2. Combine all ingredients in a bowl – with only 2/3 of the cheese.
  3. Mix together.
  4. Spray a dish with cooking spray or line it with baking paper. Fill with mix. Top with remaining cheese.
  5. Cook 35 – 40 minutes.

    Serves 8.
