My twist on THAT Baked Feta Pasta recipe

We’ve all seen THAT baked feta pasta trending online and all over TikTok (if you don’t know, google Jenni Häyrinen’s uunifetapasta). It looked so bloody simple and quite delicious in pictures so I thought I’d give it a go and see if it lived up to the hype.

I can confirm, it does!

My version has a few little tweaks from the original (hello addition of chorizo). Super simple to make and very tasty, it’s perfect for a fuss free dinner and great for chilly nights.


Ingredients-

1 block danish feta 

3 punnets cherry tomatoes (I used a mixed variety from the markets)

Olive oil

Fresh thyme (dried is fine)

Handful of fresh basil leaves 

2 raw chorizos 

Method-

  1. Preheat oven to 200 degrees. 
  2. In a baking dish place the block of feta in the middle. Place the tomatoes around the feta. 
  3. Cut up the chorizo in to slices. Cut slices into quarters so they are nice little chunks. Add to the tomatoes.
  4. Sprinkle thyme over tomato mix and feta.
  5. Use a generous glug of olive oil the tomato mix and feta. 
  6. Bake for 35 minutes. 
  7. While it is baking, cook your preferred type of pasta according to directions (I used @sanremo Chickpea Pasta). 
  8. Once it has finished baking, break up feta with fork and combine tomato mixture and feta together. Add drained pasta and serve hot.
