This is my favourite zucchini slice recipe that I have found so far and is easily adaptable.
350g zucchini, grated
3/4 cup Self-Raising Flour
2 cups mixed vegetables diced (I used grated carrot, red capsicums, mushrooms and some baby spinach)
1 1/2 cups low fat cheese (you could do a blend of tasty and parmesan if you liked)
1/2 cup peas
1/2 cup corn
3 egg whites
1 onion, diced
1 cup bacon (or lean ham), diced
Preheat your oven to 180 degrees celsius.
Combine all ingredients in a bowl – with only 2/3 of the cheese.
Spray a dish with cooking spray or line it with baking paper. Fill with mix. Top with remaining cheese.
Cook 35 – 40 minutes.
